'Agave' (pronounced Ah-gah-vee) is a South American natural herbal sweetener, which is a plant nectar used in place of sugar by natives in South America and Mexico for hundreds of years. After doing considerable research, we discovered there are at least 136 species of Agave. Some species are more valuable, lower on the glycemic index, and more health producing than others. The nectar from Agave plants looks like honey, and tastes like honey, but unlike honey, Agave is low glycemic, and does not seem to spike insulin demand, when used as a sweetener.
