Why Organic?
The average farm in the United States contains the most nutrient depleted soil of any nation on earth. As a result, American citizens are fast becoming the most unhealthy people on earth. It all started about 60 years ago after the end of World War II. Farmers began being bombarded with chemical sales people who were trying to convince farmers that they needed to use artificial fertilizers to increase there crop yields thereby increasing their profits. Later these same chemical sales people also convinced farmers to use poison sprays on their fields to prevent bugs from destroying their crops which by now were lacking nutrients and were fast become unfit for human consumption. What most farmers don't realize, is the fact that God created those bugs to destroy any crops which are unfit for human consumption. If they would raise more perfect food, these destructive bugs would be few and not be a problem. But many would rather destroy the bugs which are there to protect us, and force us to eat toxic food which is bound to destroy our health. So how can farmers improve their soil and produce health promoting food? If we go to the library and study a book on earth worms, we will discover that the common earth worm makes perfect soil. The more earth worms in the soil, the more perfect the soil. The average farm in America is almost totally void of earth worms. Worms can not live on artificial fertilizer. It takes compost and natural fertilizer like our forefathers used, to create abundant earth worms. This is why we only work with organic farms in making our cheese. These dairy farms never use artificial fertilizers, never use toxic sprays, never use synthetic hormones to force their cows to produce more milk than they were created to produce. These cows were created to live on grass and hay to produce milk with a total nutrient balance. So they are never fed any grains. Also, these cows are only milked while they are eating grass. They are not milked over the winter months which results in extremely healthy cows. Q. Why is this organic cheese more expensive than most cheese products sold in local stores? A. During the past 50 years, dairy farmers have been operating under very price competitive conditions. In order to survive, many were forced to use unnatural methods force feeding their cattle with unhealthy corn silage and grains as well as using growth hormone injections. This resulted in most dairy cows producing 3 times as much milk as they were created to produce. These highly stressed dairy cows have a productive life span of only about 3 1/2 years. However, this does result in the production of low cost cheese and dairy products. But much consumption of these products will cause a hormone imbalance and other severely unhealthy conditions. Q. Are you telling us that your 100% grass fed raw milk organic cheese is a health food? A. Oh yes. By all means. Comparing this cheese with cheese made with milk from grain fed cows which you will find in most stores and restaurants, is as opposite as two different forms of the same food can get. Cheese made from grain fed cows is very high in the omega 6 fats that most people get far too much of and which leads to a variety of diseases. On the other hand, it is quite low in omega 3 which most people are dangerously deficient in. However, grass fed raw milk natural cheese is one of very few foods containing a perfect balance of omega 3 and omega 6 fats, a ratio ideal for good health. Our cheese also contains considerably more beta carotene, vitamin A, vitamin D and E, as well as additional calcium and protein. Q. Your natural Farmstead Cheese is made from raw milk? Isn't that dangerous? A. No, Not at all. The myth that milk needs to be pasteurized to be safe was created by our government during the World War II era. Babies and animals do best on raw milk. Why not adults? Heating temperatures above 122 degrees Fahrenheit will destroy beneficial enzymes. It will also alter protein and calcium indigestible to some people. Most of our cheese recipe temperatures never exceed 103 degrees. Thus preserving all important nutrients. We only accept cheese made on farms using grade A quality grass fed milk. Also, no synthetic hormones, pesticides, or artificial fertilizers are used on any of these natural farmstead cheese farms. All our farmstead cheese making ventures are inspected by the Pennsylvania Department of Agriculture. And all cheeses are cured 60 days or longer complying with FDA requirements regarding Raw Milk Cheese, making our cheese products truly safe and extremely nutritious as well as delicious. Q.
