Who We Are

Eldore Hanni was the first born son of Gottfried Hanni. Gottfried was a recent immigrant from Switzerland. Eldore was born in an apartment, above his father's cheese factory. Eldore became a licensed Wisconsin Cheese Maker at age 17.

In the next 50 years, he became one of the nations most experienced, professional cheese makers. Eldore developed several cheese recipes, winning blue ribbons. He designed and established a number of cheese factories across the nation. Penn Cheese Corporation, near Winfield, PA, is now famous for making one of the nations most delicious Baby Swiss Cheese and is one of the cheese factories that he developed.

In addition, Eldore teaches nutrition, helping people stay healthy into very old age. Several years ago, he met Robert Webb of Mulncy, PA. Robert had a very serious back problem. His doctor predicted that Bob would eventually spend the remainder of his life in a wheel chair. Eldore was able to help Bob reverse his health problems, and the two became good friends.

Early in 2004, Eldore and Robert formed a partnership, Farmstead Cheese Associates. The business is designed to help small, family dairy farms stay in business and prosper. We are training environmental conscious dairy people to make health promoting, raw milk cheese, using only milk from grass fed cows.

The Farmstead Cheese web site offers a marketing arena for family cheese makers. Eldore has trained these farms to produce a variety of some of the world's most nutritious, delicious, health promoting cheese products.
